Base:
Ingredients
- 1 1/4 cup graham wafer crumbs
- 2 tbsp sugar
- 2 tbsp butter
- 1 tbsp pure Manitoba honey
Instructions
- Mix and press into an 8x8 inch pan that has been sprayed with cooking spray.
- Bake at 325°F for 10 minutes.
Topping:
Ingredients
- 1 - 8 ounce cream cheese softened
- 2/3 cup icing sugar
- 1 large egg
- grated zest and juice from 1 lemon
- 1 1/2 cups of fresh or frozen blueberries
Instructions
- Beat cream cheese until smooth.
- Add icing sugar, egg and lemon.
- Beat 1-2 minutes until thickened and smooth.
- Add blueberries.
- Bake at 325°F for 30-35 minutes.
- Cool and then refrigerate for at least 1 hour.
