Ingredients
- 1 1/4 cup flour
- 1/4 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 cup unsalted butter, cold
- 2/3 cup creamed honey
- 1 1/2 tsp vanilla extract
- 1 egg
- 1 1/4 cups rolled oats
- 1/2 cup raisins
- 3/4 cup of chopped walnuts or pecans
- 3 tbsp wheat germ
- 2 tbsp coconut
Instructions
- Preheat the oven to 350°F.
- Mix together flour, baking powder, baking soda, and salt. Set aside.
- Using a stand mixer or hand held beaters, cream butter and honey until blended. Then add the vanilla and egg. If necessary, stop and scrape to mix the egg in well (may look curdled, this is okay).
- Add flour mixture and oats, mixing briefly.
- Add raisins, nuts, wheat germ, and coconut blending all just until incorporated. Do not over-mix.
- Drop the cookie dough by the tablespoonful onto a cookie sheet.
- Bake for 12 minutes and cool on a rack.
