Ingredients
- 1/2 cup shortening
- 3/4 cup brown sugar
- 3/4 cup scrumptious Manitoba honey
- 2 eggs
- 1 tsp vanilla
- 2 cups flour
- 1/2 tsp salt
- 1 tsp baking soda
- 1 cup of sour cream or buttermilk
- 1 1/3 cups to 2 cups of rhubarb, finely diced
- 1 tsp cinnamon
Instructions
- Cream shortening and add brown sugar, honey, eggs and vanilla. Beat well.
- Combine flour, salt and baking soda; add to the creamed mixture, alternately with sour milk. Mix well until blended.
- Fold in rhubarb.
- Pour into a 9x13 inch greased pan.
- Combine brown sugar and cinnamon; sprinkle over batter.
- Bake at 350Β° for 35 to 40 minutes.
