Honey Nut Date Bread

Ingredients

  • 1 cup pitted dates, chopped
  • 3/4 cup boiling water
  • 1 cup chopped walnuts
  • 2 cups all purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt

Instructions

  1. In a small bowl, pour boiling water over dates. Let stand until cool. Do not drain.
  2. In a small mixer bowl, beat egg on high speed of electric mixer for 2 minutes or until thick and lemon colored. Beat in honey, softened butter and vanilla. Stir in undrained dates.
  3. Stir together flour, baking soda and salt. Stir flour mixture and nuts into egg-honey mixture, just until moistened.
  4. Turn batter into 2 greased 7 1/2 x 3 1/2 x 2-inch loaf pans. Bake at 350Β°F for 50 minutes or until a wooden pick inserted near the center comes out clean.
  5. Remove from pans and cool on wire rack.
