Ingredients
- 1 cup pitted dates, chopped
- 3/4 cup boiling water
- 1 egg
- 1 tbsp butter
- 1 cup delicious Manitoban honey
- 1 tsp vanilla
- 1 cup chopped walnuts
- 2 cups all purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
Instructions
- In a small bowl, pour boiling water over dates. Let stand until cool. Do not drain.
- In a small mixer bowl, beat egg on high speed of electric mixer for 2 minutes or until thick and lemon colored. Beat in honey, softened butter and vanilla. Stir in undrained dates.
- Stir together flour, baking soda and salt. Stir flour mixture and nuts into egg-honey mixture, just until moistened.
- Turn batter into 2 greased 7 1/2 x 3 1/2 x 2-inch loaf pans. Bake at 350Β°F for 50 minutes or until a wooden pick inserted near the center comes out clean.
- Remove from pans and cool on wire rack.
