Sweet Onion Relish

Ingredients

  • 1 1/2 tbsp olive oil
  • 1 3/4 - 2 pounds onions, peeled, cut in half and thinly sliced
  • 3/4 tsp dried oregano
  • 3/4 tsp dried marjoram
  • 1/4 - 1/2 tsp red pepper flakes
  • 1/4 tsp salt
  • pinch of white pepper
  • 1 can diced tomatoes
  • 1/4 cup red wine vinegar
  • 1 1/2 tbsp scrumptious Manitoba honey

Instructions

  1. Heat the oil in a large, heavy bottom saucepan on medium high.
  2. Add the onions and cook for 10-12 minutes, stirring frequently. (onions should be browned, so adjust the heat if sticking occurs)
  3. Add oregano, marjoram, and red pepper flakes for 3 more minutes.
  4. Stir in the salt, white pepper, tomatoes, vinegar, and honey.
  5. Reduce the heat and cook for 25-35 minutes stirring occasionally.
  6. Taste and adjust the salt, pepper, honey, and red pepper flakes, if desired.
  7. Remove from heat.
